Almond Flour Cookies: More Healthy Eating

Although I'm technically done with the Whole30 Challenge, and this recipe wouldn't meet their criteria, I haven't had cookies in such a long time that I just couldn't resist making them.  

And as far far as cookies go, they are healthier than most.


Almond Flour, Chocolate Chip, Coconut Cookies

  • 2 cups blanched almond flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 6 Tbsp melted coconut oil (make sure to melt before measuring)
  • 1/4 cup honey
  • 1/2 tsp almond extract
  • 2 Tbsp water
  • 1/2 cup chocolate chips
  • 1/2 cup finely shredded unsweetened coconut


Mix the first three ingredients together.  

Next mix the honey, almond extract, water and coconut oil together.  

Add to dry ingredients.

Fold in chocolate chips and coconut.

Bake at 350 for 7-9 minutes.


These cookies don't have eggs in, so if you would rather eat the dough, that is also tasty.


I hope my craving for something sweet has been cured for a bit.  I easily could have eaten the entire batch. As far as the Whole 30 goes, because these include honey, they aren't Whole 30 approved. However, as a treat, I'd much rather eat honey than have a pile of white sugar and white flour in my sweet.

We don't eat a lot of sugar, but sometimes a cookie and milk or coffee is just the right thing. And I love that you can eat the dough. :)

I was just saying to my son that it is ages since I made cake or cookies or anything like that. I feel like I want to but when I asked him what he wanted he couldn't tell me so I guess I don't need to right now!!

I haven't baked cookies in ages either. I'm going to save this as a gluten-free recipe to try for the next time we NEED cookies!

I made chocolate chip cookies all the time when the kids where little, but haven't since. Your post makes me want to make some again.

And, I just commented that I don't spend much time on desserts, but these look very doable, as well as delicious. Especially since my daughter has decided not to eat wheat flour.

Cookies I can actually eat. Well, I'm not sure anymore. I seem to be allergic to nuts now. I have to go back and get tested because I've had two really horrible reactions in two weeks and I think it could be nut related since I rely on them so much being gluten free.
