Weekend Cooking: Comfort Food

A few weeks ago I was in charge of the middle school youth group serving the Advent meal at our church on Wednesday night. We divide up the food items to bring, but I left myself the job of bringing a side item, simply because I think it is hard to think of one and since I have two kids in the middle school group, I am bringing double what others are bringing.

All week I pondered what side I could bring.  The menu was maidrites and hot dogs (easy to make and serve by thirteen-fifteen year olds). I contemplated cole slaw, but I don't know very many people who love cole slaw.

And then, two days before the meal, my friend Kristin and I were talking on the phone and she rattled off a recipe that was a hit at various events she attends.

The best part was it was super easy to make.

Corn Casserole

2 cans whole corn, undrained
2 cans creamed corn
2 sticks melted butter
2 cups elbow macaroni

Stir together in crock pot

Add a pound of Velveeta cheese sliced up on the top. Stir in after it melts.




I made two crockpots full of this and was left with nothing by the end of the meal.  Several people came and had seconds, and three women asked for the recipe.  

This is a recipe I'll be bringing every time I'm asked to bring a side item from now on.

One of my sisters-in-law makes a similar dish -- it is always a hit, especially with kids. Good job!!

That sounds perfect for the middle-school set! Not too far from mac & cheese for the timid, but a little something extra for the adventurous.
