This spring after successfully completing a Whole 30, I totally fell off the wagon. Now that school's back in session and I have a routine to follow, it's been easier for me to eat better. However, it also takes planning. Last weekend I cooked up my lunches and breakfasts for the week. A co-worker and I split things up so if she brings breakfast one day, I will bring lunch.
Here are two of my new favorites:
Sweet Potato Zucchini Pancakes - I altered this recipe a bit for my own benefit. I'm not eating white potatoes right now, and am substituting almond flour for the whole wheat flour the recipe calls for. Both swaps just make this recipe even healthier than it already is. The recipe did include sour cream dipping sauce, but I'm not a fan of sour cream anyway, and it certainly isn't healthy.
Another great lunch has been Mason jar salads. I like that I can make these up ahead of time and they are still fresh. Pinterest has tons of recipes for them, but I've pretty much just followed the formula of putting the dressing at the bottom, and lettuce at the top and mine have seemed to work fine.
I'm on the lookout for more healthy lunch ideas, so if you have any winners, send them my way.

I love the idea of mason jar salads. Great idea and so pretty too. Lunches are a real challenge for my husband. I work from home, so I just eat whatever I can find. :)
I love the mason jar salad idea! I'm at home so I tend not to think about what I'm going to eat for lunch until I'm starving and going through the kitchen madly looking for something to eat. I like the idea of making these salads ahead of time so I can just reach in and grab one.
I so need to get on board with the mason jar salads! I actually bought a recipe book on Amazon the other day but...it's an ebook and it just feels weird to read a recipe book on my e-reader. Headdesk. the potato cakes look delicious!
I will have to give that Mason jar salad idea a try for my next take-along lunch. Actually a rare occurrence, but still.
