And it's been so hot that cooking and heating up the house hasn't seemed very desirable. But then my oldest daughter started talking about blueberry cobbler. And I found a recipe for broccoli salad on Pinterest.
So today after I ran we've been cooking a late lunch.
The Broccoli Salad is a favorite of mine but I've only made it once- back when I was newly married and learning how to cook and this seemed like the hardest recipe ever. I was happy to realize that this recipe is super easy and my cooking skill have advance greatly in the past seventeen years.
Dressing
1 cup light mayo
1 tsp. celery seed
2 T red wine vinegar (all I had was apple cider vinegar and it seems fine)
1/3 cup sugar
Salad:
2 heads of broccoli cut into small florets
10 pieces of bacon, cooked and cut into small pieces
1 cup almond slivers
1 1/2 cups seedless red grapes, halved
1/2 c. green onions, sliced
Prepare dressing and refrigerate for 30 minutes
Toss salad ingredients together in bowl
Add dressing
My mom has been known to make this salad, but she'll add raisins and olives which totally wreck it for me. I am excited that Little Sister loves this salad, too. The two of us took the entire bowl and our forks and were eating it together before anyone else was ready to have lunch.
And for dessert....
Blueberry Cobbler compliments of Big Sister
The recipe was one I had pinned on Pinterest and I was happy that Big Sister wanted to tackle it because it had a lot of text to read through and she was fine with reading the details.
This was the perfect way to end our meal which included barbecued chicken on the grill and some biscuits.
And who cares that it was 2:30 in the afternoon by the time we had lunch? I am of the opinion that it was worth the wait.

Both recipes say SUMMER! I know what you mean about heating up the house. I don't have central A/C, so I rarely use the oven in the summer. We're all about salads and the grill.
Broccoli and bacon - super. Cheers from Carole's Chatter!
Heck, we've eaten lunch that late and as long as you had a good time, that's all that matters! Love your salad and the blueberry cobbler 💗
Your salad looks good, your blueberry cobbler sounds wonderful, grilled chicken and bisquits - yum! And it's Saturday in the summer and who's keeping track of when lunch is served? As to heating up the house - well, it's been so long since I've lived in a house without A/C, I don't even remember about that. It's kind of a necessity in our part of the world. :-)
Tina, thank you for visiting my blog and for joining in my rant. It makes me feel good that I am not alone.
I, too, immensely enjoy your blog and always learn something while I am snooping around on your pages. I not only follow your blog but have your blog highlighted on my sidebar so I know when you have a new post, reminding me to head over for a visit.
I suspect that most people are more interested in their own blogs than the are in joining a community, which is understandable.
Anyway, we carry on. We do it for ourselves and our few true followers. Thanks, Anne
Broccoli salad is a big favorite in our household, and I haven't made in awhile. I think it will be on the menu this week.
I need a good broccoli salad recipe and it looks like I just found it - thanks!!
Am also pinning the blueberry cobbler. My daughter and husband will love it, and blueberries are plentiful right now.
I make that salad for potlucks sometimes and it's always gobbled up. Of course, if the bacon does not get eaten BEFORE I put it in the salad then that is a plus. I have to hide it from everyone in my house including the pup.
